From the appetizers of coconut prawns, fried brie with a blackberry coulis, fresh mussels or his famous spinach and pear salad, to main entrees like butternut squash ravioli, roasted pork tenderloin finished in brandy, fillet mignon, albacore tuna, fresh pasta or house made chicken cordon blue, Chef Dodd searches for both the freshest and finest ingredients to add to his dishes.
